Involer uses your computers default currency on the invoices, you can change it within your System Preferences.

Go to System Preferences, then click on Language & Text, navigate to the Formats tab, at the bottom of that window in the section entitled Numbers you should see options for currency type and number formatting, changes you make here will be reflected inside Involer and on generated invoices.
